Ingredients
:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably Italian-style)
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 2 cups marinara sauce (store-bought or homemade)
  • 1½ cups shredded mozzarella cheese
  • Fresh basil leaves, for garnish (optional)
  • Olive oil, for frying


Instructions:

  1. Prepare the Chicken:
    Preheat the oven to 400°F (200°C). Season the chicken breasts with salt and pepper.

  2. Set Up Breading Station:
    In three separate shallow dishes, place the flour in one, beaten eggs in another, and a mixture of breadcrumbs, grated Parmesan, garlic powder, and oregano in the third.

  3. Bread the Chicken:
    Dredge each chicken breast in the flour, shaking off excess. Dip it in the beaten eggs, then coat it with the breadcrumb mixture, pressing lightly to adhere.

  4. Fry the Chicken:
    In a large skillet, heat olive oil over medium-high heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through. You may need to do this in batches.

  5. Assemble the Dish:
    Transfer the cooked chicken to a baking dish. Spoon marinara sauce over each piece, then top with shredded mozzarella cheese.

  6. Bake:
    Place the baking dish in the preheated oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
