Grilled Salmon with Asparagus

Ingredients:

  • For the Salmon:

    • 4 salmon fillets (about 6 ounces each)
    • 2 tablespoons olive oil
    • 2 tablespoons lemon juice
    • 2 cloves garlic (minced)
    • Salt and pepper to taste
    • Fresh herbs (like dill or parsley) for garnish
  • For the Asparagus:

    • 1 bunch of asparagus (trimmed)
    • 1 tablespoon olive oil
    • Salt and pepper to taste
    • Zest of 1 lemon (optional)

Instructions:

  1. Marinate the Salmon:



    • In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
    • Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 15-30 minutes.   

  2. Prepare the Asparagus:

    • Toss the trimmed asparagus with olive oil, salt, pepper, and lemon zest (if using) in a separate bowl.
  3. Preheat the Grill:

    • Preheat your grill to medium-high heat.
  4. Grill the Salmon:

    • Place the marinated salmon fillets on the grill skin-side down. Grill for about 4-6 minutes per side, or until the salmon is cooked through and flakes easily with a fork.
  5. Grill the Asparagus:

    • While the salmon is grilling, place the asparagus on the grill. Grill for about 5-7 minutes, turning occasionally until they are tender and slightly charred.
  6. Serve:

    • Remove the salmon and asparagus from the grill.
    • Plate the salmon fillets with a side of grilled asparagus. Garnish with fresh herbs if desired.
