Ingredients:

  • 450g (1 lb) large shrimp, peeled and deveined
  • 8 oz (225g) linguine or spaghetti
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • ½ tsp red pepper flakes (optional)
  • ½ cup dry white wine (or chicken broth)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • ¼ cup chopped fresh parsley
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional, for serving)





Instructions:

  1. Cook the Pasta:
    In a large pot of salted boiling water, cook the linguine or spaghetti according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set aside.

  2. Sauté the Shrimp:
    In a large skillet, heat the butter and olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.

  3. Add the Shrimp:
    Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes until the shrimp turn pink and opaque.

  4. Create the Sauce:
    Pour in the white wine (or chicken broth) and lemon juice, scraping up any browned bits from the bottom of the skillet. Allow the sauce to simmer for 2-3 minutes until slightly reduced.

  5. Combine with Pasta:
    Add the cooked pasta to the skillet, along with lemon zest and chopped parsley. Toss to combine, adding reserved pasta water as needed to achieve desired consistency.

  6. Serve:
    Plate the shrimp scampi and garnish with additional parsley and grated Parmesan cheese if desired. Serve immediately.
