Spicy Mutton Curry Recipe

Ingredients:
- 500g mutton (bone-in, cut into medium pieces)
- 2 large onions (finely sliced)
- 2 tomatoes (chopped)
- 3-4 tablespoons oil (vegetable or mustard oil)
- 1 tablespoon ginger-garlic paste
- 2-3 green chilies (slit)
- 1 cup yogurt (whisked)
- 1 ½ teaspoons red chili powder
- 1 teaspoon turmeric powder
- 2 teaspoons coriander powder
- 1 teaspoon cumin powder
- 2 teaspoons garam masala
- Salt to taste
- Fresh coriander leaves (chopped for garnish)
- 1 cup water (for cooking)
Whole Spices:
- 1 bay leaf
- 2-3 cloves
- 2-3 green cardamoms
- 1-inch cinnamon stick
- 1 teaspoon cumin seeds
Instructions:
Marinate the Mutton
In a large bowl, marinate the mutton with yogurt, red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Set aside for at least 30 minutes to an hour.Prepare the Base
Heat oil in a heavy-bottomed pot. Add the whole spices (bay leaf, cloves, cardamoms, cinnamon, and cumin seeds) and let them sizzle for 30 seconds until fragrant.Sauté the Onions
Add the sliced onions to the pot and sauté until golden brown. This may take around 10-12 minutes.Cook the Ginger-Garlic Paste
Add the ginger-garlic paste to the onions and cook for another 2-3 minutes until the raw smell disappears.Add Tomatoes and Spices
Add the chopped tomatoes and green chilies. Cook until the tomatoes turn soft and the oil starts separating from the masala. This will take 5-7 minutes.Cook the Mutton
Add the marinated mutton to the pot. Sauté on medium heat for about 10-15 minutes, stirring occasionally until the mutton is browned and coated in the spices.Simmer the Curry
Add water, bring the mixture to a boil, then lower the heat and cover the pot. Let the mutton simmer for 1-1.5 hours or until the meat becomes tender. Stir occasionally and add more water if needed to prevent it from sticking.Finishing Touch
Once the mutton is tender, sprinkle garam masala over the curry. Stir well and cook for another 5 minutes.Garnish and Serve
Garnish with fresh coriander leaves and serve hot with steamed rice, naan, or roti
