Chausson aux Pommes – French Apple Turnovers

Ingredients

For the Puff Pastry (or use store-bought):

  • All-purpose flour – 2 cups
  • Cold butter – 1 cup (225 g), cubed
  • Salt – 1/2 tsp
  • Ice water – 1/2 cup

For the Apple Filling:

  • Apples – 3 large (Granny Smith or any tart variety), peeled and chopped
  • Butter – 2 tbsp
  • Sugar – 1/4 cup
  • Cinnamon – 1/2 tsp
  • Lemon juice – 1 tbsp

For the Glaze:

  • Egg yolk – 1
  • Milk – 1 tbsp


Instructions

Step 1: Prepare the Puff Pastry (if making from scratch)

  1. In a bowl, combine flour and salt.
  2. Add the cold butter and rub it into the flour until you get coarse crumbs.
  3. Gradually add ice water, mixing until the dough forms.
  4. Wrap the dough in plastic and chill for 30 minutes.
  5. Roll the dough into a rectangle, fold into thirds, and chill again for 30 minutes. Repeat this process 2 more times to create layers.

Step 2: Make the Apple Filling

  1. In a pan, melt the butter over medium heat.
  2. Add the apples, sugar, cinnamon, and lemon juice.
  3. Cook for 10-12 minutes until the apples are soft and the mixture is slightly caramelized.
  4. Let the filling cool completely.

Step 3: Assemble the Chausson aux Pommes

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry into a 12x12 inch (30x30 cm) square and cut into 4 equal squares.
  3. Place a spoonful of the cooled apple filling in the center of each square.
  4. Fold the pastry into a triangle or semi-circle shape, sealing the edges with a fork.

Step 4: Add the Glaze

  1. Whisk together the egg yolk and milk.
  2. Brush the tops of the turnovers with the egg wash.
  3. Make a small slit on top of each turnover to allow steam to escape.

Step 5: Bake the Turnovers

  1. Bake for 20-25 minutes until golden brown and puffed.
  2. Let the turnovers cool slightly before serving.
