  • 2 tablespoons all-purpose flour
  • 2 cups milk (preferably whole milk)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 1/2 cup breadcrumbs (for topping)

Instructions:

    • In the same pot, melt the butter over medium heat.
    • Stir in the flour and cook for about 1-2 minutes, until bubbly and lightly golden (this is a roux).
    • Gradually whisk in the milk, stirring constantly to prevent lumps. Cook for about 5 minutes, or until the mixture thickens and starts to bubble.
  3. Add the Cheese:

    • Remove the pot from the heat and stir in the shredded cheddar cheese and mozzarella (if using) until melted and smooth.
    • Season with salt, black pepper, and paprika (if desired).
  4. Combine:

    • Add the cooked macaroni to the cheese sauce, stirring until the pasta is well coated.
  5. Prepare for Baking:

    • Preheat your oven to 350°F (175°C).
    • Transfer the macaroni and cheese mixture to a greased baking dish. If you like a crispy topping, sprinkle breadcrumbs evenly over the top.
  6. Bake:

    • Bake in the preheated oven for about 20-25 minutes, or until the top is golden brown and bubbly.
  7. Serve:

    • Let it cool for a few minutes before serving. Enjoy your delicious homemade macaroni and cheese!

Tips:

  • For added flavor, you can mix in cooked bacon, ham, or vegetables like broccoli or peas.
  • Experiment with different cheeses for a unique twist, such as gouda, pepper jack, or Parmesan.

Feel free to adjust any parts of the recipe to suit your preferences!
