  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk (preferably whole milk)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 1/2 cup breadcrumbs (for topping)


Instructions:

  1. Cook the Pasta:

    • In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.
  2. Make the Cheese Sauce:

    • In the same pot, melt the butter over medium heat.
    • Stir in the flour and cook for about 1-2 minutes, until bubbly and lightly golden (this is a roux).
    • Gradually whisk in the milk, stirring constantly to prevent lumps. Cook for about 5 minutes, or until the mixture thickens and starts to bubble.
  3. Add the Cheese:
