Ingredients

For the Meatloaf:

  • 2 pounds ground beef (80% lean)
  • 1/2 pound ground pork (optional for added flavor and moisture)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika

For the Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon mustard (Dijon or yellow)

Instructions

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).
  • Prepare a baking pan by lining it with parchment paper or lightly greasing it to prevent sticking.

2. Soak the Breadcrumbs:

  • In a small bowl, combine the breadcrumbs and milk. Let them soak for about 5 minutes until the breadcrumbs absorb the milk and become soft.

3. Prepare the Meat Mixture:

  • In a large mixing bowl, combine the ground beef and ground pork (if using).
  • Add the soaked breadcrumbs, eggs, finely chopped onion, minced garlic, ketchup, Worcestershire sauce, Dijon mustard, salt, black pepper, dried thyme, dried oregano, and smoked paprika.
  • Mix all the ingredients thoroughly using your hands or a sturdy spoon until well combined. Be careful not to overmix, as this can make the meatloaf tough.

4. Shape the Meatloaf:

  • Transfer the meat mixture into the prepared baking pan.
  • Shape it into a loaf, ensuring it's evenly distributed for consistent cooking.

5. Prepare the Glaze:

  • In a small bowl, mix together the ketchup, brown sugar, apple cider vinegar, and mustard until smooth.
  • Spread the glaze evenly over the top of the meatloaf.

  • Bake for 60-75 minutes, or until the internal temperature reaches 160°F (71°C).
  • If the glaze begins to brown too much, cover the meatloaf loosely with aluminum foil to prevent burning.
