Ingredients

  • Salt – 1/2 tsp
  • Ice water – 3-4 tbsp

For the Filling:

  • Bacon – 8 slices, cooked and crumbled
  • Gruyère cheese – 1 cup, shredded (or Swiss cheese)
  • Eggs – 4 large
  • Heavy cream – 1 1/2 cups
  • Milk – 1/2 cup
  • Salt – 1/2 tsp
  • Ground black pepper – 1/4 tsp
  • Nutmeg – a pinch (optional)


Instructions

Step 1: Prepare the Crust

  1. In a bowl, combine flour and salt.
  2. Add cold butter and rub it into the flour until the mixture resembles coarse crumbs.
  3. Slowly add ice water, 1 tablespoon at a time, mixing until the dough comes together.
  4. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 2: Blind Bake the Crust

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the chilled dough on a floured surface and fit it into a 9-inch pie dish.
  3. Prick the bottom of the dough with a fork. Line the dough with parchment paper and fill with pie weights or dried beans.
  4. Bake for 15 minutes, then remove the weights and parchment, and bake for another 10 minutes until lightly golden.
  5. Let the crust cool slightly.

  1. In a large bowl, whisk together eggs, heavy cream, and milk.
  2. Season with salt, pepper, and a pinch of nutmeg (optional).
  3. Stir in the shredded cheese and crumbled bacon.

  1. Pour the egg mixture into the pre-baked crust.
  2. Spread the bacon and cheese evenly in the filling.

  1. Reduce the oven temperature to 350°F (175°C).
